The Honey Storey

A2 Badri Cow Ghee is a premium, traditional ghee made from the milk of Himalayan Badri cows, a native Indian breed. It contains A2 beta-casein
protein, considered easier to digest and more beneficial than A1. The ghee is usually made by the bilona (hand-churned) method and is valued for its high medicinal, nutritional, and Ayurvedic properties. It’s rare and costly due to the limited milk yield of Badri cows and their natural habitat in the Himalayan region.

These cows are small, sturdy, and graze on natural herbs, grasses, and shrubs in high altitude regions — giving their milk unique medicinal properties.
 Himalayan Diet: Cows feed on wild medicinal herbs, enriching the milk and ghee with antioxidants and immunity-boosting compounds 
Handmade in Small Batches: Often prepared in rural Himalayan homes or gaushalas using firewood and earthen pots.
Recognized under the National Bureau of Animal Genetic Resources (NBAGR) as a unique Indian breed

Authentically Hand Made Desi Cow Bilona Ghee - 2 days Making Process

STEP I
It starts from e
xtracting milk from cow’s udder by hand, without using any machine. The process begins only after the calf has been fed by the Cow. 

STEP 2
It takes 25-30 litres approx. to produce 1 litre Desi Ghee. Milk is boiled on slow flame for 6–7 hours, traditional method often used in Indian villages.

STEP 3
The fresh milk is cultured by adding 1–2 teaspoons of jaman (sour buttermilk or curd) and then kept overnight to form rich, thick curd by morning.

STEP 4
The curd is hand-churned using a traditional wooden bilona, moved rhythmically back and forth for about 45 minutes.

STEP 5
White Makkhan is then heated on slow fire in a clay pot, what remains is pure, fragrant, liquid gold — authentically made – A2 Desi Cow Bilona Ghee.
